Volzhenka’s story began in Astrakhan, on the banks of the Volga River; a historic Silk Road city famed for its abundance and connection to the Caspian Sea. For over half a century, our family fishery has honoured this heritage, cultivating caviar with the same traditions and respect for nature that have defined the region for centuries.

The name Volzhenka, a colloquial word once used for the women of the Volga River, anchors us to our origins. It honours the quiet strength, intuition, and elegance of the region’s women, qualities that continue to shape our house today.

From Past to Present

Volzhenka’s arrival in Europe in 2007 marked the continuation of a heritage built over generations. Our farms in Greece honour the exacting standards of our mother farm, spring water drawn from natural sources, freshly caught feed, and a steadfast commitment to maintaining pure sturgeon lines.
The savoir-faire behind our caviar is the work of specialists who embody decades of inherited knowledge, guided by practices that have remained unchanged in their essence. With a philosophy rooted in patience and minimal interference, we allow the roe to mature naturally, preserving the depth, purity, and authenticity that define true caviar.

Flagship Farm -- Drama, Greece

Volzhenka’s EU flagship farm is located in Drama, Greece , a site chosen after an extensive search for a location that could truly mirror the purity, stability, and natural conditions of our mother farm. This rare gem in Europe offers an environment that allows our savoir-faire to flourish without compromise.
The farm consists of two distinct water fields, each contributing to the exceptional quality of our caviar.
The first is a spring-fed pool field, supplied with some of the purest natural spring water in the region. Its temperature remains remarkably stable throughout the year, fluctuating only by a few degrees — an ideal environment for sturgeon well-being.

With a water-exchange rate of 1,200 litres per second, the pools remain constantly refreshed, ensuring optimal oxygenation. This continuous flow supports healthy development, steady growth, and the precise maturation that sturgeon require for world-class caviar.

The roe produced here is notable for its elegance and clarity of character:
a diameter of 2.8–3.4 mm, and a sophisticated colour palette ranging from light grey to charcoal black, with occasional hues of nut brown and light olive green. These natural variations speak to the purity of the environment and the authenticity of our methods.

Taste is shaped by origin.
Located near the Aegean Sea, the farm benefits from seasonal access to freshly caught anchovies and krill, which the sturgeon are fed for half the year. This natural diet imparts depth, complexity, and the unmistakable gastronomic pleasure that defines Volzhenka caviar.

The second water field sits on a deep, 60-metre lake — a calm, mineral-rich environment that further contributes to the refinement and consistency of our production.

Together, these two fields embody the harmony between heritage, nature, and expert oversight — the foundation of Volzhenka’s signature caviar.

Our Sturgeons

Rooted in wild origin, our sturgeon breeds are raised in environments that stay true to their natural rhythm, free from hormones or additives, and guided by traditional methods of care. The unique composition of our waters encourages high fat and protein levels, allowing the fish to mature slowly and the roe to develop the richness and character that define Volzhenka caviar.

We produce artisan caviar using leading sustainable practices, developed through decades of research. All our sturgeon are pure-bred, their DNA direct from their wild ancestors, and our farms use natural spring water. That’s why you can experience the wild taste of caviar.
