Sevruga caviar is savoured for its exceptional delicacy of flavour, which is balanced by a distinctive, oceanic freshness. Sevruga sturgeon are recognised by their star-patterned skin. Their glistening silvery eggs range from pale slate to charcoal in hue and measure just two millimetres in diameter.
Small but mighty, Sevruga sturgeon only grow to around 25kg – making them the most diminutive of all the sturgeon species.
