Prepared according to a centuries-old Astrakhan salting recipe, the Russian Oscietra sturgeon takes up to 15 years to harvest. Its velvety eggs range from shades of amber to darkest mahogany – hence its nickname as the ‘Gold Standard ’of caviar.
